Recipe Courtesy of Cheryl L. from North Carolina, who says “Chock full of diced Hass Avocados and fresh peppers, tomatoes, olives and onion- this salsa will have fans cheering for both teams!! Serve with tortilla chips or pita crisps and watch it disappear. Even delicious on top of a game day burger right off the grill.”

Ingredients:

  • 1 1/2 ripe, fresh avocado, halved, pitted, peeled and diced
  • 1/2 cup yellow pepper, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup red onion, diced
  • 1/2 cup cherry tomatoes, quartered
  • 1/4 cup Feta cheese, crumbled
  • 1 Tbsp. olive oil
  • 1/2 lime, juiced
  • 3 dashes of Greek seasoning
  • parsley to garnish

Instructions:

  1. In a bowl, combine avocados, tomatoes, yellow pepper, onion and olives. In a separate small bowl combine olive oil, seasoning and lime juice.
  2. Pour olive oil mix over veggies and toss. Top with feta cheese and parsley. Enjoy!
