IRVINE, Calif. – When it comes to cooking for mom on Mother’s Day, we all want to prepare dishes that will make mom feel special.
“Since moms are held in such high regard, the dishes we make for her have to be special, with just the right touch,” recommends Chef Gustavo Chavez, who regularly appears on Univision’s “Despierta America.” Chef Chavez is an expert when it comes to preparing meals for special occasions and has entertained millions of television viewers through his cooking segments.
“One of my favorite ingredients for special occasion cooking, such as Mother’s Day, is the Hass avocado. The avocado’s creamy taste and versatility is ideal for creative cooking and its year-round availability makes grocery shopping easier too. Included in a breakfast, lunch, dinner or dessert recipe, Hass avocados add the special touch just right for Mother’s Day,” added Chef Chavez.
To help inspire this year’s Mother’s Day menu planning, the Hass Avocado Board has developed several delicious and easy-to-prepare recipes such as:
HASS AVOCADO SHRIMP COCKTAIL
Ingredients
- 2 Tbsp thick, chunky tomato salsa
- 2 Tbsp seafood cocktail sauce
- 2 Tbsp chopped onion
- 2 Tbsp diced seedless cucumber
- 1 1/2 Tbsp chopped cilantro
- 1 1/2 Tbsp lime juice
- 2 Hass Avocados (1 pound), diced
- 30 large (21 to 25 count per pound), cooked shrimp with tails
- 6 lime slices for garnish
- 6 sprigs cilantro for garnish
Instructions
- Thoroughly combine salsa and next 5 ingredients; gently fold in avocado.
- Chill mixture 1 hour to marry flavors. (Mixture is best served the day it’s made.)
- To serve, divide avocado mixture among 6 stemmed glasses.
- Hang 5 shrimp, tails outside glass, around each rim.
- Garnish each with 1 twisted lime slice and 1 sprig cilantro.
Yields 6 servings.
