Ingredients:

  • 1 cup raw cashews
  • 2 ripe, fresh avocados, halved, pitted and peeled
  • 2 tsp. ground cinnamon
  • 2 medium bananas
  • 4 Tbsp. cacao powder
  • 2 tsp. pure vanilla extract
  • dash of sea salt

Instructions:

  1. Place a small handful of cashews on the side for garnish. Place the rest of the raw cashews in food processor until smooth (about 5 minutes). If you don't have food processor, you can skip a step by buying raw cashew butter and adding 1/2 cup of raw cashew butter to blender.
  2. Place avocados in food processor (or blender).
  3. Peel bananas and place them in food processor (or blender) with cashew butter and avocado.
  4. Blend until smooth. Use a spatula to scrape sides into the mix if needed.
  5. Add cacao powder, cinnamon, vanilla extract, and dash of sea salt.
  6. Blend again until all the ingredients are mixed using a spatula to assist if needed.
  7. Chop the remaining cashews.
  8. Scoop 1/2 cup serving into small glass or bowl. Sprinkle with chopped cashews. It can be served immediately or chilled if desired.
