2011 Kick Off with Hass Avocados Recipe Contest Finalist. Recipe Courtesy of Amanda F. from North Carolina, who says, “This recipe gives all of your guests an individual “bowl” of southwestern-style avocado dip. The unique bowl is in the form of half of an avocado (skin only) filled with a delicious dip. The dip is absolutely mouth-watering, and creating a football theme makes your friends/family enjoy Hass even more (is that even possible?)!”
This is designed to look like a float in the Rose Bowl parade, complete with avocado pits as the wheels and a football! 🙂

Ingredients:

  • 6 ripe, fresh avocados, halved, pitted and peeled
  • 1 (7 oz.) can of diced tomatoes, drained
  • 1 (15.5 oz.) can of corn, drained
  • 1 (3.8 oz.) can of sliced black olives, drained
  • 1 (10 oz.) pkg. roasted red pepper hummus (any variety)
  • 1/4 red onion, diced
  • 1 lime, juiced
  • 5 Tbsp. sour cream
  • 3 slices of bacon, chopped
  • 1 pkg. tortilla chips

Instructions:

  1. Scoop out the avocado flesh from the skin, leaving the skin intact. In a large bowl, mash the avocados. Then combine corn, black olives, sour cream, red onion, tomatoes, hummus, and lime.
  2. Carefully scoop the combined ingredients into the avocado skin as bowls. For fun, sprinkle the bacon pieces into the shape of footballs on top of the avocado mixture. Add lines of sour cream to complete the football.
  3. Guests will enjoy their own avocado bowl accompanied with tortilla chips.
