Avocado Citrus Salad with Toasted Black Walnuts

Ingredients:

  • 2 ripe, fresh avocados, halved, pitted and peeled
  • 1/4 head Bibb lettuce
  • 1 ruby red grapefruit
  • 1 navel orange
  • 1/2 cup black walnuts, toasted
  • 1 cup alfalfa sprouts
  • 1/2 cup poppy seed dressing

Instructions:

  1. Clean and spin dry lettuce, tear in bite size pieces and place on a chilled plate.
  2. Peel and section orange and grapefruit.
  3. Peel and section avocado.
  4. On top of lettuce arrange alternately a section of orange, section of avocado, section of grapefruit in a circular manner and repeat.
  5. Sprinkle with toasted black walnuts and top with alfafa sprouts. Drizzle with poppy seed dressing. Served chilled.
