Ingredients:
- 2 ripe, fresh avocados, halved, pitted, peeled and diced
- 2 cups plain nonfat Greek yogurt
- 1/2 cup unsweetened vanilla milk (soy or cow's milk of equal measure may be substituted)
- juice of 1 lemon (approximately 2-3 Tbsp.)
- zest of 1 lemon (approximately 1 Tbsp.)
- 3 Tbsp. sugar
- 1/8 tsp. salt
Instructions:
- Place all ingredients in food processor and blend until smooth. Transfer mixture to ice cream or frozen yogurt machine and mix according to manufacturer's directions. In approximately 15-30 minutes, you'll be enjoying refreshing and creamy soft-serve Avocado-Lemon Frozen Yogurt. If you prefer a firmer frozen yogurt, place soft-serve in airtight container in the freezer for 1 hour.
- If no ice cream or frozen yogurt machine is available, blended avocado mixture can transferred to an airtight container and placed in the freezer for 2-3 hours. Stir mixture every 30 minutes, then enjoy!
