Avocado & Papaya Chicken

Ingredients:

  • 2 ripe, fresh avocados, halved, pitted and peeled
  • 2 cups fresh papaya, diced
  • 1 cup flour
  • 1 tsp. seasoned salt
  • 3 lbs. chicken breasts, skinless and boneless
  • 1 cup orange juice
  • 1 lime, juiced
  • 1/2 lemon, juiced
  • 1/2 cup brown sugar or demarara sugar
  • 1 Tbsp. cornstarch
  • 1 Tbsp. soy sauce
  • 1/2 tsp. salt

Instructions:

  1. Mash one avocado, and half of the second avocado to puree consistency. (Save other half of avocado for garnish).
  2. Spread puréed avocado over bottom of a large baking dish (glass or ceramic).
  3. Combine flour and seasoned salt. Dredge chicken in flour mixture and arrange in baking pan, on top of avocado mash.
  4. Bake in oven at 350 degrees F for 35 minutes, turn chicken to other side and bake 15 more minutes.
  5. While chicken cooks, in a saucepan, combine orange juice, lime juice, lemon juice, sugar, cornstarch, soy sauce, and salt. Cook until mixture thickens, then gently stir in papaya chunks.
  6. Pour mixture over chicken. Bake for 10 more minutes, or until internal temperature reaches 165 degrees F.
  7. Garnish with slices of avocado and serve.
