Avocado Pound Cake

Ingredients:

  • 1 1/2 cup all-purpose flour
  • 1 1/2 cups whole wheat flour
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup ripe, fresh avocado, halved, pitted, peeled and mashed
  • 1/2 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 2/3 cup unsweetened applesauce
  • 5 eggs
  • 1 Tbsp. vanilla
  • 8 oz. plain Greek yogurt

Instructions:

  1. Preheat oven to 350 degrees F and lightly grease a bundt pan.
  2. Mix together dry ingredients including all purpose flour, whole wheat flour, baking soda, baking powder and salt.
  3. Cream together mashed avocado, softened butter and sugar. Then mix in remaining wet ingredients including applesauce, eggs, vanilla and Greek yogurt.
  4. Add dry ingredients to wet ingredients and mix until incorporated, but don't overbeat.
  5. Pour batter in prepared bundt pan and bake at for 40-45 minutes until a toothpick comes out clean.
