Ingredients:
- 1 1/2 cup all-purpose flour
- 1 1/2 cups whole wheat flour
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup ripe, fresh avocado, halved, pitted, peeled and mashed
- 1/2 cup unsalted butter, softened
- 2 cups granulated sugar
- 2/3 cup unsweetened applesauce
- 5 eggs
- 1 Tbsp. vanilla
- 8 oz. plain Greek yogurt
Instructions:
- Preheat oven to 350 degrees F and lightly grease a bundt pan.
- Mix together dry ingredients including all purpose flour, whole wheat flour, baking soda, baking powder and salt.
- Cream together mashed avocado, softened butter and sugar. Then mix in remaining wet ingredients including applesauce, eggs, vanilla and Greek yogurt.
- Add dry ingredients to wet ingredients and mix until incorporated, but don't overbeat.
- Pour batter in prepared bundt pan and bake at for 40-45 minutes until a toothpick comes out clean.
