Avocado Relish and Italian Chicken

Ingredients:

  • 1 pkg. puff pastry shells
  • 2 chicken breasts
  • canola oil (or substitute)
  • 2 tsp. garlic
  • 2 tsp.oregano
  • salt and pepper (to taste)
  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 1/4 red onion
  • 1/3 serrano chile pepper
  • 1 Tbsp. cilantro in a bowl
  • 1 lime, juiced
  • 2 tsp. honey

Instructions:

  1. Bake 2 chicken breasts with canola oil, 2 tsp. garlic, 2 tsp. oregano, salt and pepper at 350 degrees F. Cook to internal temperature of 165 degrees F. Let the chicken cool and then dice small.
  2. Then bake the puff pastry shells until golden brown and let cool. Then dice small 1 avocado, 1/4 red onion, 1/3 serrano chile pepper and 1 Tbsp. cilantro in a bowl. Add 1 juiced Lime, 2 tsp. honey, salt and pepper to taste.
  3. Fill the pastries with chicken and then top them with avocado relish and diced tomato. Enjoy!
