Avocado Stuffed Turkey Albóndigas with Creamy Avocado Dip

By using turkey instead of pork and baking instead of frying, this is a more nutritious twist on a classic dish.

Ingredients:

  • For Albóndigas (meatballs)

  • 1/2 lb. ground turkey
  • 1/2 gal. turkey sausage
  • 1 garlic clove, minced
  • 3 tsp. fresh parsley, chopped
  • 1/4 cup bread crumbs
  • 1/4 cup Parmesan cheese, grated
  • 1 egg
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 ripe, fresh avocado, halved, pitted, diced to 1/4 inch cubes
  • For Dipping Sauce

  • 1 ripe, fresh avocado, halved, pitted, peeled and sliced
  • 1/3 cup sour cream
  • 1/3 cup plain yogurt
  • 1/2 cup fresh cilantro, chopped
  • 1 Tbsp. lime juice
  • salt and pepper (to taste)

Instructions:

  1. For the albóndigas:
  2. Preheat oven to 375 degrees F. Line baking sheets with foil paper and spray with non-stick oil.
  3. In a bowl, mix ground turkey, turkey sausage, garlic, parsley, bread crumbs, Parmesan cheese, egg, salt and pepper until completely combined. With a spoon or a small ice cream scooper, scoop even amounts of albóndigas onto baking sheets. With your finger, make a hole into each albóndiga, stuff with avocado and seal well by pinching them back into shape.
  4. Place albóndigas in preheated oven and bake for 25 minutes, until golden brown.
  5. Remove albóndigas from oven. Allow to cool for a few minutes
  6. serve warm with dipping sauce.
  7. For dipping sauce:
  8. Place all ingredients in blender. Blend on high until smooth.
