Ingredients:
For Albóndigas (meatballs)
- 1/2 lb. ground turkey
- 1/2 gal. turkey sausage
- 1 garlic clove, minced
- 3 tsp. fresh parsley, chopped
- 1/4 cup bread crumbs
- 1/4 cup Parmesan cheese, grated
- 1 egg
- 1 tsp. salt
- 1 tsp. pepper
- 1 ripe, fresh avocado, halved, pitted, diced to 1/4 inch cubes
For Dipping Sauce
- 1 ripe, fresh avocado, halved, pitted, peeled and sliced
- 1/3 cup sour cream
- 1/3 cup plain yogurt
- 1/2 cup fresh cilantro, chopped
- 1 Tbsp. lime juice
- salt and pepper (to taste)
Instructions:
- For the albóndigas:
- Preheat oven to 375 degrees F. Line baking sheets with foil paper and spray with non-stick oil.
- In a bowl, mix ground turkey, turkey sausage, garlic, parsley, bread crumbs, Parmesan cheese, egg, salt and pepper until completely combined. With a spoon or a small ice cream scooper, scoop even amounts of albóndigas onto baking sheets. With your finger, make a hole into each albóndiga, stuff with avocado and seal well by pinching them back into shape.
- Place albóndigas in preheated oven and bake for 25 minutes, until golden brown.
- Remove albóndigas from oven. Allow to cool for a few minutes
- serve warm with dipping sauce.
- For dipping sauce:
- Place all ingredients in blender. Blend on high until smooth.
