Avocado, Walnut and Pea Pesto

Ingredients:

  • 1/3 cup walnuts (chopped or in pieces)
  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 4 garlic cloves
  • 1/2 cup packed basil (about 1 oz.)
  • 1 cup green peas, cooked from frozen
  • 1/2 tsp. ground black pepper

Instructions:

  1. Cook the frozen peas in a pot according to package instructions.
  2. Get out a food processor, bullet blender, or other blending tool - add all ingredients and pulse until most of the mixture is smooth but you can still see tiny pieces of walnuts.
