Combining the savory flavors of baked avocado filled with butternut squash, croutons and red pepper cooked until golden brown with the sweet flavors of plum and honey in a syrupy plum sauce. Makes a delightful entrée or side dish.

Ingredients:
- 1 onion, diced
- 1/3 cup sesame oil
- 1 cup butternut squash, roasted and diced
- 1 cup bread (croutons), roasted and diced
- 1 red pepper, diced
- 1/2 cup cashew nuts, roughly chopped
- 1/2 cup coconut, shredded
- 1/4 cup fresh coriander
- salt and pepper
- 5 ripe, fresh avocados, halved, pitted and peeled
- 1 Tbsp. sesame oil
Plum Sauce Ingredients
- 1/4 cup sunflower oil
- 1/3 cup onion, diced
- 1 tsp. garlic, minced
- 1/2 tsp. chile, seeds removed and chopped
- 1/2 tsp. all-spice
- 1/4 tsp. curry powder
- 1 lb. red plums, pitted and roughly chopped
- 1/4 cup soy sauce
- 1 orange, juiced (reserve zest)
- 2 lemons, juiced (reserve zest)
- 1/4 cup honey
Instructions:
- Baked Avocado:
- Fry the onion in the sesame oil. Mix with all the other stuffing ingredients. Season it to taste with salt and pepper. Place spoonfuls into the avocado cavity.
- Bake at 400 degrees F for 5 minutes, then transfer to a broiler until the top is light brown. Do not over cook the avocados as they will turn bitter. Serve with an oriental plum sauce.
- Plum Sauce:
- Heat the sunflower oil. Fry the onion, garlic, chile, all-spice and curry powder. Add the plums, soy sauce, orange zest and juice, lemon zest and juice and honey and simmer for 1 hour 15 minutes, until thickened and smooth. Stir often to prevent it from sticking on the bottom of the pot.
