Candice’s Sweet Potato and Avocado Burger

Ingredients:

  • 1 1/2 lb. sweet potato (roasted with 1 1/2 Tbsp. extra virgin olive oil, 2 Tbsp. granulated garlic powder, 1/2 teaspoon salt)
  • 2 1/2 Tbsp. reduced sodium soy sauce
  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 1/2 cup yellow onion, roughly chopped
  • 3 cups gluten-free rolled oats
  • 3/4 cup walnuts, finely chopped
  • 1/2 cup flaxseed meal
  • 2 Tbsp. unrefined coconut oil or extra virgin olive oil, to saute the burgers

Instructions:

  1. In a food processor, add the roasted sweet potato, soy sauce and pulse to combine.
  2. Add the avocado and onion to the food processor and pulse until fully combined forming a consistency like mashed potatoes.
  3. In a large bowl, add the oats, walnuts, and flaxseed meal.
  4. Remove the fully combined sweet potato mixture from the food processor and fold into the large bowl with the oats, walnuts and flaxseed meal.
  5. Form 1/3 cup of the mixture into a round burger-shaped patty.
  6. In a medium saute pan over medium heat, add the oil and saute the patties for about 4 minutes per side, or until they are warmed through and golden brown on each side.
  7. Top the burgers with the fresh avocado, kale and tomato.

Notes & Tips:

While mixing the sweet potato burger mixture, use a spatula or wooden spoon and move the mixture around until the onion is fully incorporated, do not over-mix.

Serving Suggestion: Place on roasted buns and add your favorite condiment.
