Ingredients:
- 1 1/2 lb. sweet potato (roasted with 1 1/2 Tbsp. extra virgin olive oil, 2 Tbsp. granulated garlic powder, 1/2 teaspoon salt)
- 2 1/2 Tbsp. reduced sodium soy sauce
- 1 ripe, fresh avocado, halved, pitted and peeled
- 1/2 cup yellow onion, roughly chopped
- 3 cups gluten-free rolled oats
- 3/4 cup walnuts, finely chopped
- 1/2 cup flaxseed meal
- 2 Tbsp. unrefined coconut oil or extra virgin olive oil, to saute the burgers
Instructions:
- In a food processor, add the roasted sweet potato, soy sauce and pulse to combine.
- Add the avocado and onion to the food processor and pulse until fully combined forming a consistency like mashed potatoes.
- In a large bowl, add the oats, walnuts, and flaxseed meal.
- Remove the fully combined sweet potato mixture from the food processor and fold into the large bowl with the oats, walnuts and flaxseed meal.
- Form 1/3 cup of the mixture into a round burger-shaped patty.
- In a medium saute pan over medium heat, add the oil and saute the patties for about 4 minutes per side, or until they are warmed through and golden brown on each side.
- Top the burgers with the fresh avocado, kale and tomato.
Notes & Tips:
Serving Suggestion: Place on roasted buns and add your favorite condiment.
