Cheesy Corn & Avocado Dip

“For a creamy dip or spread, swap out up to 1/2 the cream cheese with avocado. It adds a new flavor twist” Recipe courtesy of Sarah of Owings Mills, MD.

Ingredients:

  • 1 cup frozen corn
  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 4 oz. light cream cheese
  • 4 oz. Cheddar cheese, shredded
  • 1/2 tsp. garlic powder
  • 1/4 tsp. cumin
  • 1/4 tsp. salt
  • 1/8 tsp. cayenne pepper (optional)

Instructions:

  1. Preheat oven to 350 degrees F.
  2. In a bowl, combine all ingredients and mix well. Transfer to oven-safe baking dish and bake for 15-20 minutes or until bubbly. Serve with tortilla chips or toasted bread.
