Ingredients:
- 2 (8 in. x 7 in.) soy wrappers
- 1/2 cup Avocado Bleu Cheese Dressing (see make ahead recipe below)
- 6 Roma tomatoes slices, thinly sliced
- 2/3 ripe, fresh avocado, halved, pitted, peeled and thinly sliced
- 2 1/2 oz. cooked chicken breast, thinly sliced
- 2 turkey bacon slices, cooked crisp
- 1 oz. Romaine, shredded
- 1 fresh basil leaf, julienned
Avocado Bleu Cheese Dressing
- 3 Tbsp. ripe, fresh avocado, halved, pitted, peeled and mashed
- 5 Tbsp. Bleu cheese dressing
Instructions:
Avocado Bleu Cheese Dressing:
- Mix together all ingredients. Refrigerate.
Assembly:
- Spread the soy wrapper with 2 tsp. Avocado Bleu Cheese Dressing over the entire wrapper.
- Begin layering on the bottom half of the wrapper.
- Top with 3 slices tomato.
- Top with 3 slices fresh avocado.
- Top with 1 1/4 oz. thinly sliced chicken.
- Top with 1 slice crisp cooked bacon.
- Top with 1/2 oz. shredded Romaine.
- Top with about 5 pieces of julienne basil.
- Roll up tightly. (Shelf life refrigerated is 2 hours).
- Serve with 1/2 oz. Avocado Bleu Cheese Dressing on the side for dipping.
