Ingredients:

  • 2 (8 in. x 7 in.) soy wrappers
  • 1/2 cup Avocado Bleu Cheese Dressing (see make ahead recipe below)
  • 6 Roma tomatoes slices, thinly sliced
  • 2/3 ripe, fresh avocado, halved, pitted, peeled and thinly sliced
  • 2 1/2 oz. cooked chicken breast, thinly sliced
  • 2 turkey bacon slices, cooked crisp
  • 1 oz. Romaine, shredded
  • 1 fresh basil leaf, julienned
  • Avocado Bleu Cheese Dressing

  • 3 Tbsp. ripe, fresh avocado, halved, pitted, peeled and mashed
  • 5 Tbsp. Bleu cheese dressing

Instructions:

  1. Avocado Bleu Cheese Dressing:

  2. Mix together all ingredients. Refrigerate.
  1. Assembly:

  2. Spread the soy wrapper with 2 tsp. Avocado Bleu Cheese Dressing over the entire wrapper.
  3. Begin layering on the bottom half of the wrapper.
  4. Top with 3 slices tomato.
  5. Top with 3 slices fresh avocado.
  6. Top with 1 1/4 oz. thinly sliced chicken.
  7. Top with 1 slice crisp cooked bacon.
  8. Top with 1/2 oz. shredded Romaine.
  9. Top with about 5 pieces of julienne basil.
  10. Roll up tightly. (Shelf life refrigerated is 2 hours).
  11. Serve with 1/2 oz. Avocado Bleu Cheese Dressing on the side for dipping.
