Choco-Mint Bites

Ingredients:

  • 1/2 cup ripe, fresh avocado, halved, pitted, peeled and puréed (approx. 3/4 of an avocado)
  • 3.5 oz. bittersweet chocolate, 70-85% cacao, melted
  • 1 cup maple syrup
  • 1/2 tsp. mint extract
  • 1/2 tsp. baking soda
  • 2 tsp. vanilla extract
  • Pinch of salt
  • 2 1/3 cup almond flour
  • 1/3 cup arrowroot flour or cornstarch
  • Heavenly Chocolate Ganache

  • 1 ripe, fresh avocado (approx. 3/4 cup), halved, pitted and peeled
  • 1/2 cup maple syrup
  • 1/2 cup cocoa powder
  • 1 oz. bittersweet (70-85% cacao) chocolate, melted
  • 2 tsp. vanilla extract

Instructions:

  1. For the bites:
  2. Preheat oven to 350 degrees F and put small liners into a mini-muffin tin.
  3. Puree the avocado in a food processor and measure out 1/2 cup. Reserve the rest for enjoyment elsewhere.
  4. Add in melted chocolate, maple syrup, mint, vanilla extract and salt and process for 2-3 min, scraping down the sides of the food processor periodically.
  5. In a separate bowl, thoroughly mix almond flour and arrowroot flour.
  6. Add the avocado chocolate mixture into the flours, stirring until just combined.
  7. Portion a generous tablespoon into each liner.
  8. Bake for 15-17 minutes or until a toothpick comes out clean.
  9. Dress the Choco-Mint Bites up for a night out on the town with the Heavenly Chocolate Ganache.
  10. For the ganache:
  11. Puree one whole avocado and add in the remaining ingredients.
  12. Once the Choco-Mint Bites are cool, frost them with the Heavenly Chocolate Ganache.
