Creamy Avocado Pasta

Ingredients:

  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 1 cup basil
  • 1/2 cup cilantro
  • 2 garlic cloves
  • 1 Tbsp. fresh lemon juice
  • 2 tsp. mild olive oil
  • 1/4 cup Romano cheese, grated
  • 10 pumpkin seeds (substitute pumpkin seeds, if there is a tree nut allergy, for whole almonds)
  • 8 oz. favorite pasta
  • salt (to taste)

Instructions:

  1. Boil pasta to desired tenderness.
  2. While pasta is cooking, blend the remaining ingredients in a food processor until smooth and creamy.
  3. When pasta is done, mix with avocado cream sauce. Garnish with basil, pumpkin seeds or coarsely chopped almonds and a slice of avocado. Enjoy!
