Ingredients:
- 1 tsp. olive oil
- 1/2 cup yellow onion, diced
- 2 garlic cloves, minced
- 3 cups vegetable broth
- 2 ripe, fresh avocados, halved, pitted, peeled, sliced and divided
- 2 Tbsp. lime juice
- 2 Tbsp. cilantro leaves, chopped, divided
- 1/4 tsp. ground cumin
Instructions:
- Heat oil, onion and garlic in medium saucepan over medium high heat. Cook, stirring frequently, about 2 minutes, until onion is transparent. Stir in broth, 1-1/2 of the avocados, lime juice, 1 tablespoon of cilantro and cumin. Remove from heat.
- Puree soup using an immersion blender until smooth. Reheat before serving.
- Pour soup into shallow bowls. Add remaining avocado slices and cilantro on top of soup.
