Creamy Spinach Rainbow Salad

Ingredients:

  • Salad

  • 1 (12 oz.) bag of spinach
  • 1/2 cup baby carrots, sliced
  • 1/2 cup mushrooms, sliced
  • 1/2 cup fresh corn
  • 1 red apple, cored, diced
  • 1/2 cup roasted almonds, roughly chopped
  • Dressing

  • 2 ripe, fresh avocados, halved, pitted and peeled
  • 2 garlic cloves
  • 1/4 cup lemon juice, freshly squeezed
  • 2 Tbsp. extra virigin olive oil
  • salt and pepper (to taste)

Instructions:

  1. Place the baby spinach, carrot, mushrooms, corn, apple, and almonds in a large bowl. Set aside.
  2. In a small food processor, combine garlic, avocados, lemon juice, and oil. Pulse to create a creamy paste.
  3. Season with salt and pepper to desired flavor.
  4. Add avocado dressing to the salad and toss to combine. Enjoy!
