Using avocado in baked goods adds rich flavor and a nutrient boost, and the use of dates in this recipe gives sweetness while cutting back on added sugar!

Ingredients:
- 1 cup pitted dates
- 2 cups boiling water to soak dates (1/4 cup reserved for cooking)
- 1/2 cup all purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- 6 oz. dark chocolate bar
- 1 ripe, fresh avocado, halved, pitted, peeled and mashed
- 2 large egg whites
- 1 tsp. vanilla extract
- 3/4 cup walnuts, chopped
- Non-stick cooking spray
Instructions:
- Preheat oven to 350 degrees F.
- In a heat-safe bowl or large measuring cup, place dates and cover with 2 cups boiling water. Allow to soak for 15-20 mins.
- In a large bowl, sift together flour, cocoa powder, baking powder and cinnamon. Set aside.
- Drain dates, reserving ¼ cup soaking liquid. Place soaked dates in the bowl of a small food processor or a high-speed blender with ¼ cup reserved liquid and blend on high until a smooth paste forms, approximately 1-2 minutes. Set aside.
- Place dark chocolate in a medium-sized microwave-safe bowl and melt in microwave.
- Once melted, remove from microwave and add mashed avocado to dark chocolate – whisk together vigorously until smooth (or use an electric hand mixer).
- Then add the date paste and vanilla extract to chocolate-avocado mixture, whisking (mixing) until smooth. Finally, add the egg whites, gently whisking (mixing) until well-combined. Do not overmix.
- Using a spatula, add the wet mixture to the dry mixture and mix until well-combined. Fold in chopped walnuts.
- Spread batter in an 11x7-inch baking pan that has been coated with non-stick cooking spray.
- Bake for approximately 20 minutes or until a toothpick inserted in the center comes out clean.
- Remove from oven, set pan on a cooling rack and allow the brownies to cool and set completely before cutting into 18 pieces and serving.
