Recipe Description:

Using avocado in baked goods adds rich flavor and a nutrient boost, and the use of dates in this recipe gives sweetness while cutting back on added sugar!

Ingredients:

  • 1 cup pitted dates
  • 2 cups boiling water to soak dates (1/4 cup reserved for cooking)
  • 1/2 cup all purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 6 oz. dark chocolate bar
  • 1 ripe, fresh avocado, halved, pitted, peeled and mashed
  • 2 large egg whites
  • 1 tsp. vanilla extract
  • 3/4 cup walnuts, chopped
  • Non-stick cooking spray

Instructions:

  1. Preheat oven to 350 degrees F.
  2. In a heat-safe bowl or large measuring cup, place dates and cover with 2 cups boiling water. Allow to soak for 15-20 mins.
  3. In a large bowl, sift together flour, cocoa powder, baking powder and cinnamon. Set aside.
  4. Drain dates, reserving ¼ cup soaking liquid. Place soaked dates in the bowl of a small food processor or a high-speed blender with ¼ cup reserved liquid and blend on high until a smooth paste forms, approximately 1-2 minutes. Set aside.
  5. Place dark chocolate in a medium-sized microwave-safe bowl and melt in microwave.
  6. Once melted, remove from microwave and add mashed avocado to dark chocolate – whisk together vigorously until smooth (or use an electric hand mixer).
  7. Then add the date paste and vanilla extract to chocolate-avocado mixture, whisking (mixing) until smooth. Finally, add the egg whites, gently whisking (mixing) until well-combined. Do not overmix.
  8. Using a spatula, add the wet mixture to the dry mixture and mix until well-combined. Fold in chopped walnuts.
  9. Spread batter in an 11x7-inch baking pan that has been coated with non-stick cooking spray.
  10. Bake for approximately 20 minutes or until a toothpick inserted in the center comes out clean.
  11. Remove from oven, set pan on a cooling rack and allow the brownies to cool and set completely before cutting into 18 pieces and serving.
