Ingredients:

  • For the Egg and Bacon Guacamole

  • 2 hard-boiled eggs, chopped
  • 1/2 cup chipotle hollandaise sauce
  • 4 strips of bacon, cooked to a crisp, diced
  • 2 Tbsp. queso fresco, crumbled
  • 1 Tbsp. cilantro, chopped
  • For the Guacamole

  • 2 ripe, fresh avocados, halved, pitted and peeled
  • 1 Serrano chile, minced
  • 1 Tbsp. red onion, minced
  • 1 Roma tomato, diced
  • juice of 1/2 a lime
  • salt and pepper (to taste)

Instructions:

  1. In a large bowl, mash the two avocados with a potato masher or fork until well mashed, but not puréed.
  2. Add in the tomatoes, red onion, Serrano chile and lime juice and fold in with a large spoon. Add salt and pepper to taste.
  3. Distribute the guacamole mixture in even amounts at the bottom of your service bowls and add an even layer of the hollandaise sauce.
  4. Top off with egg, bacon, queso fresco and cilantro in even amounts.
