Ingredients:
Salad
- 3 cups cooked black (forbidden) rice
- 1/2 cup jicama, diced
- 1/4 cup red onion, diced
- 1 cup fresh mango, diced
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
- 1 Tbsp. cilantro, chopped
Dressing
- 3 Tbsp. avocado oil
- 1 lime, juiced
- 1/4 tsp. sea salt
- 1/4 tsp. cayenne pepper
- 1 tsp. agave nectar
Instructions:
- Combine all prepared ingredients and toss with dressing.
