Forbidden Avocado and Mango Salad

Ingredients:

  • Salad

  • 3 cups cooked black (forbidden) rice
  • 1/2 cup jicama, diced
  • 1/4 cup red onion, diced
  • 1 cup fresh mango, diced
  • 1 ripe, fresh avocado, halved, pitted, peeled and diced
  • 1 Tbsp. cilantro, chopped
  • Dressing

  • 3 Tbsp. avocado oil
  • 1 lime, juiced
  • 1/4 tsp. sea salt
  • 1/4 tsp. cayenne pepper
  • 1 tsp. agave nectar

Instructions:

  1. Combine all prepared ingredients and toss with dressing.
