Make your own fried avocado wedges with homemade ranch dipping sauce for your next game day party or happy hour. This avocado appetizer is dipped in a beer batter seasoned with paprika, fried to a crisp and paired with a creamy buttermilk ranch sauce recipe.

Ingredients:
- 1/2 cup buttermilk
- 2 tsp. lime juice, freshly squeezed
- 2 tsp. cilantro, minced
- 1/2 tsp. oregano
- 2 tsp. onion, finely diced
- 1 tsp. garlic, minced
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 3/4 cup mayonnaise
- 1 1/2 cups Lager beer
- 1 1/2 cup flour
- 2 tsp. paprika
- 1 Tbsp. garlic, minced
- 4 ripe, fresh avocados, halved, pitted and peeled
- vegetable oil (as needed for frying)
- salt (to taste)
Instructions:
- To make the El Ranch-O Dipping Sauce: in a medium size mixing bowl, combine the buttermilk, lime juice, cilantro, oregano, onion, garlic, salt and pepper. Whisk until combined. Add the mayonnaise and whisk until smooth. Cover and refrigerate for 1 hour.
- In a medium size mixing bowl, whisk the beer, flour, paprika and garlic together until well blended.
- Let the batter stand for 2 hours before using it.
- In a large frying pan, heat oil to a depth of two inches.
- Peel the avocados and slice into wedges.
- Dip the wedges in the batter. Fry in the hot oil until golden about 3 minutes, turning once. Fry in batches.
- Remove the wedges from the pan and drain on paper towels. Sprinkle with salt to taste.
- Serve immediately with El Ranch-O Dipping Sauce.
