Ingredients:
- Non-stick cooking spray
- 2 ripe, fresh avocados, halved, pitted and peeled
- 1/2 cup vegetable oil
- 2 cups fresh baby spinach
- 2 large eggs
- 1 3/4 cups granulated white sugar
- 2 tsp vanilla extract
- 2 medium, fresh zucchini, with skin, grated
- 1 1/2 cups whole wheat flour
- 1 1/2 cups enriched all-purpose flour
- 2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp table salt
- 1/4 tsp ground nutmeg
- 1 Tbsp ground cinnamon
- 3/4 cup mini chocolate chips
Instructions:
- Preheat oven to 350° F.
- Coat muffin tins with cooking spray (or line with muffin tin liners).
- Puree avocado, oil and spinach in a food processor or blender.
- In a large bowl, use a hand mixer (or stand mixer with paddle attachment) to whisk eggs until light and foamy. Add avocado puree, sugar, vanilla and grated zucchini to eggs. Mix on medium speed until smooth.
- Combine dry ingredients in a separate bowl and mix together.
- Gradually add dry ingredients (about half at a time) to wet ingredients and mix on low speed until just combined. Be careful not to overmix.
- Fold in chocolate chips.
- Divide batter evenly among prepared 24 muffin cups (about ¼ cup batter each).
- Bake for 15-18 minutes or until a toothpick inserted in the center of the muffin comes out clean.
- For easy removal, cool in pan for 10 minutes, before placing on cooling rack.
