Lemony Quinoa and Avocado Salad

Ingredients:

  • 1/2 cup quinoa, uncooked
  • 1 cup water
  • 1 red bell pepper, diced
  • 1/2 cup cilantro, chopped
  • 1/4 cup green onions or chives, diced
  • 2 Tbsp. tahini
  • 1 garlic clove, minced
  • 1 Tbsp. olive oil
  • 1/4 cup lemon juice
  • 1 ripe, fresh avocado, halved, pitted and peeled
  • dash of salt and pepper

Instructions:

  1. Heat 1 cup of water with 1/2 cups of quinoa until boiling.
  2. Cover and reduce heat to low and cook until the liquid is absorbed (approx. 15 minutes).
  3. While the quinoa cooks prep your ad-ins and dressing: chop your bell pepper, cilantro and green onions and place in a medium bowl.
  4. To make dressing whisk together the tahini, olive oil, garlic and lemon juice.
  5. Once quinoa is cooked add it to the bowl with the chopped red bell pepper, cilantro and green onions. Pour dressing on top and toss.
  6. Chop and add the avocado to the quinoa prior to serving and top with a dash of salt and pepper.
  7. Serve cold.
