Ingredients:
- 16 oz. linguini
- 1 gal. water
- 1/2 tsp. salt
- 2 oz. fresh basil leaves
- 3 garlic cloves
- 2 Tbsp. pine nuts
- 1/4 cup slivered almonds
- 1 3 oz. tomato
- 1 ripe, fresh avocado, halved, pitted, peeled and puréed
- 2 Tbsp. lemon juice
- 3/4 tsp. creole seasoning
- 1 cup cherry tomatoes
Instructions:
- Prepare linguini pasta by boiling the water, adding the salt.
- While water is heating to boil, begin making sauce by putting the basil and garlic in a food processor and pulse the blade until it is finely chopped.
- Place the linguine into the boiling water and cook until al dente (about 6 minutes).
- Add pine nuts and almonds into the food processor and continue to pulse to mix.
- Add the avocado and tomato and continue to mix.
- Add the lemon juice and the creole seasoning and mix well.
- Cook pasta and drain.
- Add the sauce to pasta and top with cherry tomatoes sliced in half.
- Serve.
