Mediterranean Avocado and Cheese Chip Appetizer

Ingredients:

  • 10 multigrain (brown rice, flax, sesame, sunflower seeds, quinoa) cracker chips
  • 1/2 cup organic Roma tomatoes, diced and strained
  • 1/2 ripe, fresh avocado, halved, pitted, peeled and diced
  • 10 2 1/2 in. slices of low fat Pecorino, Romano or Mozzarella cheese
  • 1 Tbsp. walnuts, chopped
  • fresh spinach leaves

Instructions:

  1. Arrange the multigrain chips on a serving plate.
  2. Place one cheese slice on each chip.
  3. Mix the diced avocado and tomatoes.
  4. Place a small portion of mixed avocado and tomatoes on each cheese slice.
  5. Sprinkle the chopped walnuts over the chips.
  6. Garnish the plate with the fresh spinach leaves.
