Ingredients:
- 1 pound homemade or store-bought pizza dough, at room temperature
- 1 1/2 ripe fresh Hass avocados, halved, pitted, peeled
- 1 1/2 cup loosely packed fresh spinach leaves, rinsed
- 1 1/2 cup loosely packed fresh basil leaves, rinsed
- 1/3 cup grated parmesan cheese
- 1/2 tsp. garlic powder
- 1 tsp. salt
- 2 Tbsps. fresh lemon juice
- 1/3 cup red bell pepper (or cherry tomatoes), rinsed, stems removed and diced
Instructions:
- Preheat oven to 425 degrees. Let pizza dough sit at room temperature for at least 2 hours.
- Sprinkle flour on a clean surface. Separate dough into 3 parts to make it easier to stretch and roll. Stretch dough with your hands until ¼ inch thick circle. If needed use a rolling pin to stretch the corners lightly. Sprinkle some flour on top of dough and grease the edges of the cookie cutter with oil or with cooking spray. Having a small bowl on the side with oil helps to keep the cutter moist. For leftover dough, fold and roll until dough forms a ball again. Let it sit and stretch again.
- Cut dough into holiday forms with cookie cutter and transfer to an ungreased baking pan or lay on top of parchment paper. If you don’t have cookie cutters, cut dough into small triangles with a sharp knife.
- Bake mini pizzas for 10-12 minutes or until golden brown. Remove mini pizzas from the oven and allow to cool.
- Meanwhile, place spinach and basil in a food processor and pulse a few times at a time until herbs are roughly chopped.
- Add 1 ½ avocado, parmesan cheese, garlic powder, lemon juice and salt. Pulse a few times until it is mixed to a coarse mixture but not smooth.
- It’s time to decorate pizza appetizers. Spoon and spread avocado sauce, place red bell pepper (or cherry tomatoes) on top of the tree, and it is ready to serve.
Notes & Tips:
Recipe yields 30 – 35 mini pizzas. Avocado sauce makes 1 ½ cups.
