Not Your Mama’s Cookie Pie

Ingredients:

  • 1 (9-in.) deep dish pie crust, unbaked
  • 2 large eggs
  • 1/2 cup whole wheat pastry flour
  • 1/2 tsp. salt
  • 1/2 cup quick cooking oats
  • 1/4 cup white granulated sugar
  • 1/2 cup packed brown sugar
  • 4 Tbsp. butter, softened
  • 1 ripe, fresh avocado, halved, pitted and peeled or (3/4 cup mashed)
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup walnuts, chopped

Instructions:

  1. Pre-heat the oven to 325 degrees F.
  2. If using a frozen pie crust, take out of freezer and let thaw while prepping other ingredients.
  3. Peel, seed, and mash the avocado and set aside in a small bowl.
  4. Beat eggs in a large mixing bowl on high speed until foamy. Beat in flour, salt, oats, white sugar and brown sugar. If butter is not room temperature, microwave in small bowl 10-15 seconds. Add softened butter & mashed avocado to large mixing bowl and beat into other ingredients.
  5. Stir in chocolate chips and walnuts. Spoon into pie shell.
  6. Bake for 50 minutes or until knife inserted into center of pie, comes out clean.
  7. Best eaten slightly warm. Enjoy!
