Old Southwest Hummus Dip

Ingredients:

  • 4 garlic cloves
  • 1 tsp. salt (or for a better taste use 2 Tbsp. of capers instead of salt per 1 tsp. of salt. I prefer capers)
  • 2 Tbsp. tahini paste
  • 1/2 cup fresh lemon juice
  • 2 (15.5 oz.) cans of garbanzo beans (1 can drained)
  • 1 can of cannellini beans drained
  • 1/2 cup light olive oil
  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 3/4 cup fresh cilantro or basil (which ever - to taste)
  • 1/8 tsp. paprika (or to taste)
  • 1/2 tsp. cayenne pepper or ground red chipotle pepper (optional - If you want to spice it up a little - The chipotle really gives it a kick)

Instructions:

  1. Place all ingredients in a food processor blend till smooth. If it is NOT real smooth add water a little at a time till desired consistency.

Notes & Tips:

Enjoy with a nice cold beer and chips.
