Ingredients:

  • 2 Tbsp. butter
  • 2 Tbsp. onion, finely chopped
  • 1/4 cup flour
  • 3 1/2 cup low-fat milk
  • 8 oz. yellow Cheddar cheese, grated
  • 4 oz. American cheese slices, broken up
  • 1 tsp. yellow mustard
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 12 oz. wagon wheel pasta
  • 2 ripe, fresh avocados, halved, pitted, peeled and diced

Instructions:

  1. In a medium saucepan melt butter over medium heat
  2. add onion, cook stirring frequently, about 4 minutes until softened.
  3. Add flour
  4. stir until completely blended. Mixture will be thick.
  5. Stir in milk, whisking until smooth.
  6. Cook, stirring, until mixture comes to a boil, about 5 minutes.
  7. Reduce heat to low. Stir in cheeses, mustard, salt and pepper until smooth. Set sauce aside.
  8. In a large pot of salted water, boil pasta until it is al dente. Drain.
  9. Pour sauce over pasta and stir. Add in avocado.
  10. Transfer to a platter and serve. Mac and cheese will thicken as it stands.
