Ingredients:
- 2 Tbsp. butter
- 2 Tbsp. onion, finely chopped
- 1/4 cup flour
- 3 1/2 cup low-fat milk
- 8 oz. yellow Cheddar cheese, grated
- 4 oz. American cheese slices, broken up
- 1 tsp. yellow mustard
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 12 oz. wagon wheel pasta
- 2 ripe, fresh avocados, halved, pitted, peeled and diced
Instructions:
- In a medium saucepan melt butter over medium heat
- add onion, cook stirring frequently, about 4 minutes until softened.
- Add flour
- stir until completely blended. Mixture will be thick.
- Stir in milk, whisking until smooth.
- Cook, stirring, until mixture comes to a boil, about 5 minutes.
- Reduce heat to low. Stir in cheeses, mustard, salt and pepper until smooth. Set sauce aside.
- In a large pot of salted water, boil pasta until it is al dente. Drain.
- Pour sauce over pasta and stir. Add in avocado.
- Transfer to a platter and serve. Mac and cheese will thicken as it stands.
