Ingredients:

  • 1 1/4 cup whole-wheat pastry flour
  • 1/2 cup cocoa powder
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. pumpkin pie spice
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1 cup pumpkin puree
  • 1 ripe, fresh medium avocado, halved, pitted, peeled and mashed
  • 1/4 cup maple syrup
  • 1/4 cup dates, pureed
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1/4 cup dark chocolate chips

Instructions:

  1. Preheat the oven to 350 degrees F and prepare and line a 9X13 in bread pan with parchment paper. 
  2. In a large bowl, whisk together the flour, pumpkin spice, cinnamon, baking soda, baking powder, and salt. Set aside. 
  3. With a hand mixer beat together the pumpkin puree, mashed avocado, eggs, maple syrup, pureed dates, and vanilla extract.
  4. Pour the wet ingredients into the dry and stir together using a wooden spoon or spatula until just combined. 
  5. Pour the batter into the prepared pan and sprinkle dark chocolate chips on top. 
  6. Bake for 45 to 50 minutes. Let the bread cool in the pan and then transfer onto a cooling rack to cool completely before slicing into approximately 9 slices that are 1 ½ inch thick. Enjoy!
