Salsa and Guacamole Pasta Salad

Ingredients:

  • bow tie pasta (piccolini or farfalle)
  • 1 (16 oz.) container of medium chunky salsa or homemade pico de gallo
  • 1 lime
  • 1 lemon
  • 1/4 cup cilantro, chopped
  • 3 Tbsp. olive oil
  • 2 ripe, fresh avocados, halved, pitted, and peeled
  • 1 pack of guacamole seasoning or seasonings (to taste)
  • salt and pepper (to taste)
  • cilantro (garnish)

Instructions:

  1. Start with bow tie pasta (Piccolini or Farfalle) cooked per pkg. instructions, drained and cooled. Add one container (16 ounces) refrigerated medium chunky salsa or your own homemade Pico de gallo, juice from one lime and one half small lemon, 1/4 cup chopped cilantro and 3 Tbsp. of olive oil to the cooled pasta.
  2. Small dice two large avocados and in a separate bowl mix with the juice from the remaining 1/2 lemon and the pack of guacamole mix or use your own seasonings.
  3. Toss gently and then mix into the pasta. Salt and pepper to taste, garnish with the remaining cilantro.
