Salted Caramel Fudge Mug Cake

Ingredients:

  • Fudge Cake

  • 1/2 cup ripe, fresh avocado, halved, pitted, peeled and puréed
  • 1/4 cup unsweetened cocoa powder
  • 4 egg whites
  • 1/2 tsp. vanilla extract
  • 1/4 cup dark brown sugar
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tsp. baking powder
  • 3/4 cup whole wheat pastry flour
  • 1/4 cup semi-sweet chocolate chips
  • Salted Caramel Sauce

  • 3 Tbsp. dark brown sugar
  • 1 1/2 Tbsp. unsweetened vanilla almond milk
  • pinch of coarse sea salt (topping)

Instructions:

  1. Combine avocado and cocoa powder together until mixed thoroughly.
  2. Stir in egg white, sugar, vanilla, and almond milk and mix until combined.
  3. Mix in baking powder and flour and stir just until incorporated. Mix in chocolate chips.
  4. To make caramel sauce, place brown sugar and almond milk in microwave safe bowl.Place on high for 40-60 seconds until bubbly.
  5. Stir mixture to incorporate and set aside to thicken.
  6. Lightly mist 4, 8-ounce coffee mugs with cooking spray.
  7. Pour 1/4 cake batter into each coffee mug.
  8. Microwave one mug cake at a time on high for 2 minutes. Repeat with remaining mugs.
  9. Poke holes on top of cake with a toothpick.
  10. Pour 1/4 caramel sauce over each cake and sprinkle with a pinch of sea salt.
