Shrimp Po Boy Salad with Avocado Mayonnaise

Ingredients:

  • 8 cherry tomatoes, diced
  • 1/4 cup orange bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup corn kernels, drained from the can
  • 1/4 cup fresh avocado, diced into 1/4 inch cubes
  • 2 tsp. thyme leaves
  • 1 tsp. cilantro leaves, chopped
  • 32 shrimp (31/40 count), peeled, cooked, chilled
  • 46-inch hoagie rolls, sliced horizontally
  • lettuce for garnish
  • Avocado Mayonnaise

  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 1/2 lemon, juiced
  • 1 tsp. garlic clove, minced
  • 1/4 tsp. paprika, ground
  • 1/8 tsp. celery salt
  • 1/8 tsp. cayenne, ground

Instructions:

  1. Mix the first seven ingredients together in a small bowl. Set aside.
  2. For the avocado mayonnaise, place ingredients together in a blender and puree until smooth. Spread some of the avocado mayonnaise inside each of the sliced hoagie rolls.
  3. Fold the shrimps and other ingredients into the remaining avocado mayonnaise.
  4. Place even amount inside each hoagie roll.
  5. Garnish with greens.
