Ingredients:
- 8 cherry tomatoes, diced
- 1/4 cup orange bell pepper, diced
- 1/4 cup red onion, diced
- 1/4 cup corn kernels, drained from the can
- 1/4 cup fresh avocado, diced into 1/4 inch cubes
- 2 tsp. thyme leaves
- 1 tsp. cilantro leaves, chopped
- 32 shrimp (31/40 count), peeled, cooked, chilled
- 46-inch hoagie rolls, sliced horizontally
- lettuce for garnish
Avocado Mayonnaise
- 1 ripe, fresh avocado, halved, pitted and peeled
- 1/2 lemon, juiced
- 1 tsp. garlic clove, minced
- 1/4 tsp. paprika, ground
- 1/8 tsp. celery salt
- 1/8 tsp. cayenne, ground
Instructions:
- Mix the first seven ingredients together in a small bowl. Set aside.
- For the avocado mayonnaise, place ingredients together in a blender and puree until smooth. Spread some of the avocado mayonnaise inside each of the sliced hoagie rolls.
- Fold the shrimps and other ingredients into the remaining avocado mayonnaise.
- Place even amount inside each hoagie roll.
- Garnish with greens.
