Southern-Style Pimiento Cheese

Recipe Description:

“Besides as a dip, it is Southern tradition to add to hamburgers or to make as grilled cheese. For a kick, add half a diced roasted jalapeño.” Recipe courtesy of Kerri of Greenville, SC.

Ingredients:

  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 2 Tbsp. plain nonfat Greek yogurt
  • 2 oz. light cream cheese
  • 1 cup 2% sharp Cheddar cheese, shredded
  • 1 1/2 Tbsp. pimientos, diced
  • 1/4 tsp. garlic powder
  • 1/4 tsp. freshly cracked black pepper (to taste)

Instructions:

  1. Peel and remove the pit of the avocado and place pulp in mixing bowl.
  2. Add cream cheese and Greek yogurt. Mash together until relatively blended.
  3. Add the remaining ingredients - Cheddar cheese, pimientos, garlic powder, and black pepper - and fold into avocado mixture until ingredients are evenly distributed.
  4. Serve with your favorite veggies, whole wheat crackers, and/or tortilla chips.
