Super “Avocado” Bowl!!

Ingredients:

  • 2 ripe, fresh avocados, halved, pitted and peeled
  • dash of lemon juice
  • salt and pepper (to taste)
  • 1/2 cup Brazil nutes, finely chopped
  • 1/2 cup Cheddar cheese, grated
  • 2 Tbsp. Parmesan cheese
  • 1 Tbsp. parsley, freshly chopped
  • 2 tomatoes, skinned, finely chopped
  • 1 pkg. whole wheat breadcrumbs
  • 2 Tbsp. melted butter
  • paprika to taste

Instructions:

  1. Halve the avocados, remove fruit from the skins and brush insides with lemon juice.
  2. Dice avocado in bowl, sprinkle lemon juice & add all ingredients except breadcrumbs, butter & paprika.
  3. Spoon into shells, add breadcrumbs on top and drizzle with butter, and then paprika.
  4. Bake at 400 degrees F for 15 minutes.
