Ingredients:

  • 1 ripe, fresh avocado, halved, pitted, peeled and diced
  • 1 cup cauliflower, diced
  • 2 tomatoes, diced
  • 1/3 cup red onion, finely diced
  • 1 Tbsp. jalapeño pepper, minced
  • 1 garlic clove, minced
  • 1 Tbsp. fresh cilantro, chopped
  • 1 Tbsp. lime juice
  • 1/2 tsp. salt
  • 1 Tbsp. olive oil

Instructions:

  1. In a large bowl, combine avocado, cauliflower, tomatoes, onion, jalapeño, garlic, cilantro, lime juice, salt and olive oil.
  2. Transfer to a serving bowl. Serve with homemade pita chips.
