Ingredients:
- 1 1/2 cup vegetarian refried beans
- 2 Tbsp. reduced-sodium taco seasoning
- 1 prepared pizza crust, thin style
- 1/2 cup canned black beans
- 1/2 cup frozen corn kernels, thawed
- 3/4 cup cherry tomatoes, cut into quarters
- 1/3 cup Colby Jack cheese, finely shredded
- 1/2 cup Romaine lettuce, chopped
- 1/4 cup fresh cilantro, coarsely chopped
- 1/2 ripe, fresh avocado, halved, pitted, peeled and diced
Instructions:
- Preheat oven to 400 degrees F.
- In a small bowl, mix refried beans and taco seasoning.
- Place pizza crust on baking pan and spread refried bean & taco seasoning mixture over prepared pizza crust.
- Top with black beans, corn, tomatoes and cheese.
- Place in oven for 9 minutes, until heated through and cheese is melted.
- Remove from oven. Top with lettuce, cilantro and diced avocado.
- Slice into 8 pieces and serve.
