Recipe Description:

Taco Tuesday done right! Serve these delicious air fried avocados tacos with pickled red onion (encurtido) and a light and fresh avocado sauce. These tacos are not only bursting with flavor but provide a good source of fiber and protein. This recipe comes together in a flash when using the air fryer, but you can also make it in less than 15 minutes in the oven.

Ingredients:

  • Pickled Onion (Encurtido):

  • 1/2 medium red onion, peeled, and diced
  • 1/2 cup thinly sliced red cabbage
  • 1 jalapeño, stemmed, seeded, and thinly sliced
  • 2 cups water for boiling
  • 1 lime, juiced
  • 1 tsp. sea salt
  • 1 Tbsp. orange juice, squeezed from a fresh orange (optional)
  • Avocado Fries and Sauce:

  • 2 ripe, fresh avocados, halved, pitted, peeled, and divided
  • 1 egg, lightly beaten
  • 1/4 cup breadcrumbs
  • 1 tsp. chili powder or red pepper flakes
  • 2 Tbsp. fresh lemon juice
  • 2 Tbsp. water
  • 1/4 tsp. salt
  • For Tacos:

  • 8 4-inch corn tortillas
  • 8 Lime wedges
  • Chopped cilantro

Instructions:

  1. For the Pickled Onion:

  2. Place red onions, cabbage, and jalapeño in a medium bowl. Pour 2 cups of boiling water over vegetable mixture and let stand for 2 minutes; drain and return to bowl. Stir in fresh lime juice, salt and freshly squeezed orange juice, if desired. Cover and store in the refrigerator until ready to serve.
  1. For the Avocado Fries and Avocado Sauce:

  2. Combine breadcrumbs with chili powder or red pepper flakes in a small bowl. Place egg in a separate bowl.
  3. Cut 1 1/2 avocados into 12 slices. Dip each avocado slice into egg, then breadcrumbs, and place on parchment paper in a single layer.
  4. Place the avocado slices into air fryer at 375ºF for 6 minutes. Flip avocados halfway through cooking time. If needed air fry the avocado in two batches.
  5. Place the remaining 1/2 avocado into a small food processor and blend with lemon juice, water, and salt until smooth.
  1. For Assembly:

  2. Place 1-2 avocado fries on each corn tortilla. Top with pickled red onion and avocado sauce, dividing evenly. Serve with lime wedges and garnish with chopped cilantro.

Notes & Tips:

Leftover encurtido can be stored in the refrigerator for up to one week. Tomatillo salsa is also a great topper. If no air-fryer, bake at 400o F degrees for 10-14 minutes.
