Recipe Description:

If you’re looking for a fresh take on traditional poke, this vegan version using watermelon in place of ahi tuna will be sure to satisfy both your family’s appetites and your family’s grocery budget! This flavorful recipe comes together in minutes and can be served on its own, or in a poke bowl served atop rice along with your choice of toppings such as seaweed salad, edamame, julienned carrots, chopped mango, and/or cucumber slices.

Ingredients:

  • 4 cups seedless watermelon, cut into 1-inch cubes
  • 3 Tbsp. low-sodium soy sauce (use Tamari if you would like to keep this recipe gluten-free)
  • 2 Tbsp. toasted sesame oil
  • 1 Tbsp. freshly-squeezed lime juice
  • 1 tsp. seasoned rice vinegar
  • 1 tsp. freshly-grated ginger
  • Pinch of red pepper flakes (optional)
  • 1 green onion, thinly sliced (plus more for garnish)
  • 1 tsp. white or black sesame seeds (plus more for garnish)
  • 1 ripe, fresh avocado, halved, pitted, peeled, and cut into 1-inch cubes

Instructions:

  1. Place the watermelon cubes in a large glass (non-reactive) bowl.
  2. In a separate medium-sized bowl, create the marinade by whisking together the low-sodium soy sauce, sesame oil, vinegar, lime juice, ginger, red pepper flakes (if using), green onion, and sesame seeds.
  3. Pour the marinade over the watermelon cubes and toss to coat. Place in the refrigerator and marinate for 10 minutes.
  4. Remove bowl from refrigerator, gently fold in avocado cubes, and garnish with extra green onion and sesame seeds.
  5. Serve on its own, or use as a topping for poke bowls.

Notes & Tips:

It is important to use a glass bowl for marinating that is “non-reactive” – aka, a bowl that is not metallic. A glass bowl will not react with the acid in the recipe. Using a metal bowl would cause the food to take on a metallic flavor.
