Avocado, Artichoke and Sundried Tomato Frittata

This easy frittata recipe has bold flavors that will please any brunch crowd. Plus, it can be made the night before and served either warm or cold.

Ingredients:

  • 1 ripe, fresh avocado, halved, pitted, peeled and diced
  • 4 eggs
  • 4 egg whites
  • 1/4 cup Parmesan cheese, grated
  • 2 Tbsp. water
  • 2 tsp. oil from sundried tomatoes
  • 1/3 cup oil-packed sundried tomatoes, sliced
  • 1/3 cup artichoke hearts, chopped
  • 2 Tbsp. scallions, thinly sliced
  • parsley leaves (optional)

Instructions:

  1. In a bowl, whisk together eggs, egg whites, cheese and water.
  2. In a 10-inch non-stick skillet, add oil and heat over medium-high. Add half of the avocado, the sundried tomatoes, artichokes and scallions.
  3. Pour egg mixture evenly over all.
  4. Reduce heat to medium, cover and cook without stirring until eggs are set, 10 minutes. Remove from heat.
  5. Serve topped with remaining avocado and parsley leaves, if desired.
  6. Cut into 4 wedges.

Notes & Tips:

Serve with mixed greens or a fruit salad.
