Ingredients:
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
- 4 eggs
- 4 egg whites
- 1/4 cup Parmesan cheese, grated
- 2 Tbsp. water
- 2 tsp. oil from sundried tomatoes
- 1/3 cup oil-packed sundried tomatoes, sliced
- 1/3 cup artichoke hearts, chopped
- 2 Tbsp. scallions, thinly sliced
- parsley leaves (optional)
Instructions:
- In a bowl, whisk together eggs, egg whites, cheese and water.
- In a 10-inch non-stick skillet, add oil and heat over medium-high. Add half of the avocado, the sundried tomatoes, artichokes and scallions.
- Pour egg mixture evenly over all.
- Reduce heat to medium, cover and cook without stirring until eggs are set, 10 minutes. Remove from heat.
- Serve topped with remaining avocado and parsley leaves, if desired.
- Cut into 4 wedges.
