Ingredients:
- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 ripe, fresh avocado, halved, pitted, peeled and mashed
- 1 cup sugar
- 2 large eggs
- 3 medium ripe bananas, mashed
- 1 Tbsp. milk
- 1 tsp. ground cinnamon
- 1 cup butterscotch morsels
Instructions:
- Preheat oven to 325°F. Spray a 9 x 5-inch baking pan with nonstick spray.
- Combine flour, baking powder, baking soda and salt in a medium bowl; set aside.
- Beat avocado and sugar in a large bowl at medium speed until creamy. Add eggs, one at a time, mixing on low until smooth. Stir in mashed bananas, milk and cinnamon and mix until combined.
- Slowly add flour mixture into avocado mixture, do not over mix. Fold in butterscotch morsels. Pour mixture into prepared baking pan.
- Bake for 60 to 70 minutes, until a toothpick comes out clean from the center. Transfer to wire rack to cool for 10 minutes. Remove from pan and cool completely.
