Avocado Lime Mug Cake

This fluffy cake gets all its richness from the avocado’s good fats and its right amount of zing from the lime, making it the perfect dessert.

Ingredients:

  • Cake

  • 1/4 cup flour
  • 2 Tbsp. granulated sugar
  • 1/4 tsp. baking powder
  • 1/2 ripe, fresh avocado, halved, pitted, peeled and mashed
  • 3 Tbsp. 2% milk
  • 1/4 tsp. lime zest
  • Lime Glaze

  • 1 Tbsp. confectioners' sugar
  • 1/4 tsp. lime juice

Instructions:

  1. Cake

  2. Spray the inside of an 8-oz. microwave-safe mug with non-stick cooking spray.
  3. In a small bowl combine flour, granulated sugar and baking powder. Stir in mashed avocado, milk and lime zest until blended. Transfer to prepared mug.
  4. Microwave 2 minutes or until cake has puffed up and is cooked through. (Timing will differ depending on wattage of your microwave).

  2. Combine confectioners sugar and lime juice, stirring until smooth. Drizzle over cake.
