Ingredients:
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
- 2 chicken breasts (Skillet Chicken with Avocado, Tomatoes and Olives recipe)
- 2 cups tomato sauce (Skillet Chicken with Avocado, Tomatoes and Olives recipe)
- 2 cups chicken broth
- 1 cup canned black beans
- 1/4 tsp. chili powder
- fresh cilantro, chopped
Instructions:
- In a large saucepot combine chicken, tomato sauce, chicken broth, beans and chili powder. Simmer over medium heat until hot, about 5 minutes.
- Stir in half of the avocado and any leftover rice.
- Divide soup among four bowls.
- Top with remaining diced avocado and chopped fresh cilantro.
