Ingredients:
- 4 10-inch whole wheat tortillas
- 1/2 cup Cheddar cheese, shredded
- 1/4 cup smoky quinoa pilaf mixture, cooked, from the Smoky Avocado Quinoa Breakfast Bowl recipe (steps 1 through 3)
- 4 eggs
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
Instructions:
- In a large skillet, warm the tortillas and add grated cheese and set aside.
- In a separate skillet, add smoky quinoa pilaf mixture from the Smoky Avocado Quinoa Breakfast Bowl.
- Crack eggs into the pan and stir with a flat-bottomed wooden spatula until they are cooked through and incorporated into the quinoa mixture.
- Add quinoa mixture and diced avocado to tortillas.
- Roll up like burritos.
Notes & Tips:
These tasty burritos have 10g of dietary fiber per serving and 18g of protein.
