Ingredients:

  • 4 10-inch whole wheat tortillas
  • 1/2 cup Cheddar cheese, shredded
  • 1/4 cup smoky quinoa pilaf mixture, cooked, from the Smoky Avocado Quinoa Breakfast Bowl recipe (steps 1 through 3)
  • 4 eggs
  • 1 ripe, fresh avocado, halved, pitted, peeled and diced

Instructions:

  1. In a large skillet, warm the tortillas and add grated cheese and set aside.
  2. In a separate skillet, add smoky quinoa pilaf mixture from the Smoky Avocado Quinoa Breakfast Bowl.
  3. Crack eggs into the pan and stir with a flat-bottomed wooden spatula until they are cooked through and incorporated into the quinoa mixture.
  4. Add quinoa mixture and diced avocado to tortillas.
  5. Roll up like burritos.

Notes & Tips:

Optional: Top with the cooked spinach and beans leftover from the Smoky Avocado Quinoa Breakfast Bowl
