Ingredients:
- 7 oz. (1/2 of 14 oz. pkg.) firm tofu
- 1 lightly beaten egg white
- 1/4 cup seasoned panko breadcrumbs
- 3 Tbsp. honey
- 2 Tbsp. lime juice
- 1 Tbsp. fresh ginger, minced
- 1 garlic clove, minced
- 1/2 cup sushi rice, cooked, cooled
- 1/4 cup cucumber, chopped
- 1/4 cup carrots, shredded
- 1 scallion, sliced on diagonal (about 2 Tbsp)
- 4 nori seaweed sheets
- 1 ripe, fresh avocado, halved, pitted, peeled and sliced
- 1/2 tsp. toasted sesame seeds
Instructions:
- Preheat oven to 400F. Spray baking sheet with non-stick cooking spray.
- Slice tofu into 4 (1/2-inch thick) rectangular slabs (about 4-inch x 1 1/2-inch x 1/2-inch). Press out water.
- Dip tofu in egg whites then in panko breadcrumbs to coat.
- Arrange on prepared baking sheet and bake 30 minutes or until golden, turning once. Let cool.
- Meanwhile, in medium bowl combine honey, lime juice, ginger and garlic. Stir in sushi rice, cucumber, carrots and scallions.
- To assemble: Place nori sheet on flat surface. Spread one fourth of the rice mixture on nori sheet at end closest to you leaving a 1 1/2 inch border on sides and end. Top with 1 piece of tofu and 1/4 of the avocado slices. Using wet hands fold in sides and roll up nori sheet. Sprinkle with sesame seeds.
- Press to flatten slightly.
- Repeat with remaining ingredients.
