Ingredients:
- 3 ripe, fresh avocados, halved, pitted and peeled
- 1 cup beer
- 3/4 cup all-purpose flour
- 1/4 cup cornmeal
- 2 Tbsp. cilantro, chopped
- 2 garlic cloves, finely chopped
- salt (to taste)
- vegetable oil (as needed for deep frying)
- 1 1/2 cup avocado salsa or favorite salsa
For Avocado Salsa
- 3 tomatillos, husked and rinsed
- 1/2 ripe, fresh avocado, halved, pitted and peeled
- 1/4 cup cilantro, chopped
- salt and pepper (to taste)
Instructions:
- To make beer batter, whisk together beer, flour, cornmeal, cilantro, garlic, and 1/4 teaspoon salt until well blended.
- Let stand at least 2 hours.
- Cut each avocado into 6 wedges.
- Heat oil in heavy medium-size saucepan to 375 degrees F.
- Coat 4 to 6 wedges in reserved beer batter.
- Deep fry in hot oil until golden, about 3 minutes. Drain on paper towels.
- Repeat with remaining wedges. Salt to taste. Serve with salsa for dipping.
For the sauce (this can be done in advance)
- In a saucepan, place tomatillos and cover with water. Bring to a boil over medium heat. Lower heat and simmer for 10 minutes. Remove from heat.
- Place cooked tomatillos into blender with avocado and cilantro. Blend on high until smooth and season with salt and pepper. If sauce is too thick, add some of the leftover tomatillo broth to loosen. Serve.
