Ingredients:

  • 1 Tbsp. olive oil
  • 1 medium, yellow onion, peeled and sliced
  • 4 garlic cloves, minced
  • 2 tsp. red pepper flakes
  • 1 tsp. ground ginger
  • 2 cups vegetable or seafood broth
  • 1 can (14.5 oz.) diced tomatoes
  • 1 can (13.5 oz.) light coconut milk
  • 1 lb. white fish, such as cod or snapper, filleted and cut into 1-inch strips
  • 1/2 lb. shrimp, peeled and de-veined
  • 2 Tbsp. lime juice
  • 1 large red bell pepper, seeded and diced into 1-inch pieces
  • 2 ripe, fresh avocados, halved, pitted, peeled and diced
  • 1/4 cup cilantro leaves, chopped, divided

Instructions:

  1. Heat oil, onion and garlic in large saucepan over medium high heat. Cook, stirring frequently, about 2 minutes, until onion is transparent. Stir in red pepper flakes and ginger.
  2. Add broth, diced tomatoes and coconut milk; cover and bring to a simmer. Add fish, shrimp, lime juice and red bell peppers; return to a gentle simmer. Cook for 10 minutes until fish is opaque and shrimp has just turned pink.
  3. Stir in avocado and cilantro just prior to serving.
