Ingredients:
- 1 Tbsp. olive oil
- 1 medium, yellow onion, peeled and sliced
- 4 garlic cloves, minced
- 2 tsp. red pepper flakes
- 1 tsp. ground ginger
- 2 cups vegetable or seafood broth
- 1 can (14.5 oz.) diced tomatoes
- 1 can (13.5 oz.) light coconut milk
- 1 lb. white fish, such as cod or snapper, filleted and cut into 1-inch strips
- 1/2 lb. shrimp, peeled and de-veined
- 2 Tbsp. lime juice
- 1 large red bell pepper, seeded and diced into 1-inch pieces
- 2 ripe, fresh avocados, halved, pitted, peeled and diced
- 1/4 cup cilantro leaves, chopped, divided
Instructions:
- Heat oil, onion and garlic in large saucepan over medium high heat. Cook, stirring frequently, about 2 minutes, until onion is transparent. Stir in red pepper flakes and ginger.
- Add broth, diced tomatoes and coconut milk; cover and bring to a simmer. Add fish, shrimp, lime juice and red bell peppers; return to a gentle simmer. Cook for 10 minutes until fish is opaque and shrimp has just turned pink.
- Stir in avocado and cilantro just prior to serving.
