- Recipe serving size: 1/2 a steak, 2 eggs, 1/2 cup of hash browns, 1/2 cup of avocado relish

Ingredients:
For Breakfast a la Mexicana
- 8 eggs
- 2 hanger or skirt steaks
- 2 cups shredded hash browns, packaged and refrigerated
- 2 cups avocado relish
For Avocado Relish (makes 2 cups)
- 1 large-sized ripe, fresh avocado, halved, pitted, peeled and diced into 1/4 inch cubes
- 2 pickled jalapeño peppers, finely diced
- 1 cucumber, peeled, seeded, finely diced
- juice of 1 1/2 limes
- kosher salt (to taste)
Instructions:
- Hash Browns:
- Heat a skillet pan with butter.
- Add hash browns and season with salt and pepper to taste. You can add sliced onions and peppers of choice for added taste.
- Steak:
- Heat a medium-sized griddle or skillet and cook steak to preference.
- Add salt and pepper as desired.
- Eggs:
- In a separate skillet, cook eggs in preferred style.
- Avocado Relish
- In a small bowl, combine the ingredients for the avocado relish.
- Refrigerate to allow flavors to blend.
