  • Recipe serving size: 1/2 a steak, 2 eggs, 1/2 cup of hash browns, 1/2 cup of avocado relish

Ingredients:

  • For Breakfast a la Mexicana

  • 8 eggs
  • 2 hanger or skirt steaks
  • 2 cups shredded hash browns, packaged and refrigerated
  • 2 cups avocado relish
  • For Avocado Relish (makes 2 cups)

  • 1 large-sized ripe, fresh avocado, halved, pitted, peeled and diced into 1/4 inch cubes
  • 2 pickled jalapeño peppers, finely diced
  • 1 cucumber, peeled, seeded, finely diced
  • juice of 1 1/2 limes
  • kosher salt (to taste)

Instructions:

  1. Hash Browns:
  2. Heat a skillet pan with butter.
  3. Add hash browns and season with salt and pepper to taste. You can add sliced onions and peppers of choice for added taste.
  4. Steak:
  5. Heat a medium-sized griddle or skillet and cook steak to preference.
  6. Add salt and pepper as desired.
  7. Eggs:
  8. In a separate skillet, cook eggs in preferred style.
  9. Avocado Relish
  10. In a small bowl, combine the ingredients for the avocado relish.
  11. Refrigerate to allow flavors to blend.

Notes & Tips:

On four separate plates, add 1/2 steak, 2 eggs, 1/2 cup of hash browns and 1/2 cup of avocado-relish on the side. Serve with warm corn or flour tortillas.
